Let’s Talk Wine and Bacon!

 

It’s cliché to say everything’s better with bacon, but it’s true.  Bacon lands a direct hit on the brain’s comfort center.  Bacon can refer to cured pork from the belly, back or side. 

While bacon dominant dishes like BLT’s are fantastic, treat it more as a supporting actor than the star.  A good rule of thumb is to pair the entire dish, not just the bacon it employs.

 

When bacon is in salads or pastas, white wine is the way to go.  Whites like an off dry Riesling or Pinot Blanc are great options. 

For more bacon forward situations, you want the wine to cut smoke and richness, but also want to compliment the food.  The perfect wine for any bacon forward dish is dark roses and light reds.

Bacon, Fig and Brie Crostini

 

Sourdough Baguette

1 lb Thick Cut Bacon, cut into small squares

Triple Crème Brie

Fresh Rosemary

Fig Jam

 

  1. Slice up the baguette, lightly toast

  2. Cup up the bacon in small squares and fry or bake

  3. Spread a liberal amount of brie on each piece

  4. Add a spoonful of fig jam on top

  5. Place a piece of bacon on each

  6. Sprinkle with a few little sprigs of rosemary
