True Chablis – not the jug wine.

The Chablis region is the northernmost wine district of the Burgundy region in France. Chablis wines are made from a Chardonnay grape but they don’t taste anything like the American Chardonnays. They also have no relation to the giant jugs of “Chablis” associated with cheap wine. Chablis wines from the Burgandy region are highly sought after and some of the best white wines in the world. The cool climate of this region produces wines with more acidity and flavors less fruity than Chardonnay wines grown in warmer climates. Wines from Chablis are frequently described as having citrus and white flower aromas with dry, lean, light-bodied flavors of citrus, pear, minerality and salinity. The soils are ancient sea-floors made up of limestone and seashell bits. In addition, Chablis wines are generally fermented in steel tanks which helps to preserve some of that minerality as well as letting the flavor of the fruit sing out
